Ground Beef

This recipe is perfect for fall and makes a beautiful centerpiece. It comes from my mother in law, Rita Lane.

  • 1 lb Ground Beef
  • 1 can Cream of Mushroom Soup
  • 1 jar/can of Mushrooms - drained ( I use the 4oz size can of stems & pieces)
  • 3 tbsp Soy Sauce
  • 2 tbsp Brown Sugar
  • 1 Onion chopped (or less)
  • 1 family size bag of Success Rice cooked acc. to directions (that's the brand I use)
  • 1 Pumpkin (no bigger than a soccer ball)
  • Oil

Cook beef and onion - drain.  Add soup, mushrooms, soy sauce, sugar and rice.
Simmer for about 10 minutes.

Cut pumpkin top and remove seeds and fibers. Rub pumpkin with oil on outside real well, top also.

Put beef mixture inside. Place top beside pumpkin also. Bake at 350 degrees for 1 to 1 1/2 hours on a baking sheet (I line my pan with foil). Serve whole pumpkin on a fall platter.

This recipe serves 4 and can be doubled for more people, just get a bigger pumpkin.

  • 1 lb Ground Beef
  • 1/2 Onion
  • 1/2 cup Ketchup
  • 1 end piece of bread crumbled in a 1/4 cup of milk
  • 1 Egg beaten
  • 1 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 stalk Celery (optional)
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Mustard

Mix and form into oval and place into casserole dish. 

Sauce

  • 3 tbsp Brown Sugar
  • 1 tsp Mustard
  • 1/4 tsp Nutmeg
  • 1/4 cup Ketchup

Mix and pour over top of meatloaf.  Bake at 350 degrees for 1 hour.

This recipe freezes well...

  • 2 lbs Hamburger
  • Onion (as much as you like)
  • Green Peppers (as much as you like)
  • 1 1/2 tsp Minced Garlic
  • 15 oz can Dark Red Kidney Beans (drained)
  • 15 oz can Light Red Kidney Beans (drained
  • 15 oz can Tomato Sauce
  • 15 oz can Petite Diced Tomatoes
  • 1 tbsp plus 1 tsp Chili Powder
  • 2 tsp Ground Cumin
  • 1/2 tsp Salt
  • 1/21 tsp Dried Basil
  • 1/4 tsp Pepper
  • 1/4 tsp Hot Sauce
  • 1 fresh or canned Green Chile seeded and chopped (optional)

Cook first 4 ingredients until beef is browned. Drain. In a large pot add rest of ingredients, cover and simmer. Stir occasionally and taste to see if you have it spicy enough! Sometimes I add a little water and/or more tomato sauce if it's too thick. 

 Serve with Sour Cream, Cheese, and Corn Chips.

This recipe was my Great Aunt Mildred's.  My family is still using this recipe today for cookouts.

  • 1 lb Hamburger
  • chopped Onion (as much as you like)
  • 15 oz can Tomato Sauce
  • 1 tsp Chili Powder
  • 1/2 - 1 tsp Salt (to taste)
  • dash of Pepper or Red Pepper (to taste)

Brown hamburger and onion.  Drain.  Mix together with rest of ingredients.  Heat until good and hot.

This recipe was my Great Aunt Mildred's.  My family is still using this recipe today for cookouts.

  • 1 lb Hamburger
  • chopped Onion (as much as you like)
  • 1/2 cup Ketchup
  • 2 tbsp Brown Sugar
  • 31 oz can Pork-N-Beans
  • 15 oz can Petite Diced Tomatoes

Brown hamburger and onion. Drain. Stir in all other ingredients. Add salt and pepper to taste. Bake at 400 degrees for approx. 50 minutes.


Roasts

  • 1  2-3 lbs Roast
  • 1 package Onion Soup Mix
  • 1 can Cream of Mushroom Soup

Put roast into casserole dish (you can either cut it into small pieces or cook it whole). Add Cream of Mushroom Soup and Onion Soup Mix on top of roast.  Cover with foil and cook at 300 degrees for at least 3-4 hours.  Low and slow is the key to make this dish tender). You can also cook this recipe without the mushroom soup, just use Onion Soup Mix.

  • 1  2-3 lbs Roast - cut up into small pieces
  • 1 can Golden Mushroom Soup
  • 1 can French Onion Soup
  • 1 can Water
  • 1 bag of Carrots
  • Potatoes (as many as you wish)
  • Salt and Pepper to taste

Place all ingredients into crock pot and cook all day on low.

Stir Fry

  • 1 lb Beef Stir Fry
  • 1/3 cup Teriyaki Sauce
  • 1 tbsp Oil
  • 2 tsp Cornstarch
  • Green Peper and Onions (optional)

Marinate stir fry in teriyaki, oil, and cornstarch in zip lock bag for at least 30 min, or longer.  Place meat in pan to cook, discarding liquid.  Add Green Peppers and Onions if you wish.

Serve with Rice.
